I’ve been baking for what seems like days, but I guess it really has been days. I think its the weather. Its gotten into the 70s here (and I know some of you are already experiencing flakes of snow, which to honest, I would love that a few times a year) and its made a baker out of me. I think Pinterest had something to do with it, as well.
After looking at a few of my favorite food blogs, I saw these. Wow! I’m trying to become of a fan of figs. Not just a,”Oh, yes. I like figs”, but a “I can’t stop eating these!” fig eater. (My grammar is so horrible. I blame it on my 8th grade English teacher. I got a C in her class, which made me never want to care about prepositions, nouns, or adverbs.) We have a fig tree in our backyard and we were lucky enough to get two this year, but the squirrels took a few nibbles before we got to them. Also, my mother-in-law is a fig fan and I would like to be able to share her enthusiasm. So this was my first attempt at cooking with figs. I think it turned out fantastic.

In case you are curious, that’s brown sugar and olive oil oozing over the figs. This was right before I placed them in the oven and roasted them for about 10 minutes. Yum.
