Spring and Summer put me in the mood for cooking (especially since I’m pregnant). I’ve been trying new recipes and pulling out old ones that are perfect for this time of the year. The first is from a food blog that I’ve been following. I’ve tried a couple of her recipes and they have all turned out awesome. The cake below is one of those recipes. Its a pina colada cake. I was drooling when I saw this recipe because it incorporates some of my favorite flavors – pineapple and coconut (not to mention, its the safest way I can currently enjoy the taste of this delicious drink).


This next one is an old favorite. I think I’ve made it about 10 times, which is alot for me who is always trying out new recipes. It is definitely my favorite chicken salad. Its the perfect combination of sweet and spicy. I got it from epicurious.com
I’ve changed the recipe slightly. Instead of boiling my own chicken, I found rotisserie chicken is delicious and easy, I add more yogurt and less mayo, and a little less curry (4 tsp.) unless you like it spicy. We like to eat ours with greens and naan.
